Durian Birthday Cake

My birthday was on July 25th and was a great big weekend getaway blast of epic proportions. I have never been on a birthday trip and have my bf Liam to thank. Thanks cutie!

Anyway, before we left for the trip on the 25th, I celebrated with my parents of course! My mom and I made a durian cheesecake together and it was so fun to bake together! We cooperated well and the outcome was a funny and cute not to mention tasty cake.

We made a durian cheesecake. (With durian from my grandfather's farm, which we have enjoyed for a month now... yum!). It was a great recipe that my mom found. You can get the recipe here for a Japanese Durian Cheesecake. So awesome.

The hello kitty design came out so hilarious and cute. It was hard to control piping the cake design so it ended up being wobbly and messy, somewhat resembling hello kitty. My brother and aunt said it was rustic and cute! 😂

The cheesecake was light and fluffy. It was tall and came out from the tin a little. However, it was kinda moist in the middle and sank down in the middle the next day. Still, super yummy, airy, light and of course, duiran-ny. We used a few cups of durian pulp. The cheese made it salty and creamy.

Below is how we melted the cheese over a double boiler. The first time I have ever double boiled. We blended the durian flesh too. Separated egg whites and beat them too. It was really airy/foamy once we mixed in the egg whites, hence the airiness in the actual cake.

We put a hello kitty design on the cake using cake batter mixed with cocoa powder. It was difficult to control piping it. We put the batter into a bag with a hole as a nozzle and the batter squirted out everywhere. Should have used a better nozzle. Still cute and rustic anyway!

Thanks mom for making the cake together! Was part of my nice birthday. Check out my other blog about an art event I went to just before my birthday. Now you know why this is best birthday ever. Will blog about my birthday road trip in my next post! 😀
