I cooked a bunch of things last weekend at Liam's house. I cooked a dinner on Saturday and a lunch on Sunday. Then I went home for father's day dinner at my parent's house.
Last weekend was supposed to be 5k weekend and we trained last minute! In the end, the 5k didn't happen as Liam's car broke down and we didn't have transport to the place which was really far away. We didn't take a Grab there as it was too expensive. We decided to do our own 5k race next week at the gym and wear my runner's bib given by the organizer and take pictures with a homemade medal! 😂I guess it wasn't meant to be - maybe I would have failed at the run anyway, so I was not bummed about it.
Anyway, we hung out at the pool after my training session on Saturday morning and still had lots of fun. I wore a bikini and looked like a beached whale. Never mind, be body proud, I told myself and sported it confidently. It was cold in the water that morning and very refreshing. Splashed water on Liam who felt cold. I didn't feel cold as I just ran on the treadmill and was burning fat like a little engine and creating lots of heat.
We watched a movie, Men In Black International, and lunched laksa after that. Then for dinner, I cooked an eggplant dish with ABC soup. ABC soup is slang for chicken soup with potatoes, onions, carrots and tomatoes. Below are the pictures.
The eggplant dish was pan fried in olive oil. I added minced chicken, eggplant and butterhead lettuce. For the sauces, I used oyster sauce. It tasted good, a little salty. I added the butterhead lettuce last and was still crispy. Did not overcook it. The eggplant was spongy and took a while to cook.
The ABC soup was as expected. I actually put chicken breast in it. It would be better with chicken bones with meat. But I make do with what I have and it's all good. S'long as it tastes close enough to be legit. Which I think was close enough. It had that sweet taste from the carrots and onions. The potatoes were soft enough and kinda powdery. I deem it a success!
For Sunday lunch, I whipped up a pan fried chicken with avocados dish. We had one avocado and one chicken breast between the two of us. I ration my food, so that a little goes a long way, and time it so food doesn't spoil. Sometimes we have to eat more and sometimes eat less. It was too little a meal for two of us and I ended up cooking two scrambled eggs to make it a full meal. Still was hungry after that. The taste was great though, as needless to say I am a fan of avocados.
Since we had a light main, I made a hearty dessert. Crepes with mangoes. As usual my crepes were irregular shaped and the first few were ugly. Towards the end, they became more uniform. I made around 6 crepes. Only 3 turned out nice. I cut mangoes to go with it. We didn't have ice cream so we just sandwiched the mangoes with the crepes and ate them. Would have been so much more complete with ice cream.
So that was it for the weekend cooking. Below are more random musings and food adventures over the past 2 weeks that I didn't yet blog about.
This was a weekday dinner I made for Liam. It was (from top) potato salad, sliced apple, (bottom) egg salad, chicken salad and boiled siew pak choy. The egg salad and chicken salad was obviously eaten in a sandwich with bread. It was inspired by Adia who made sandwiches, potato salad and sliced apples for her mentee students. Thanks Adia!
This is the King of fruits, and from my grandfather's own farm too! His durians are plentiful now and often gets sold by the kg every day when a van comes to pick them up. He saves the best ones for us though. My parents went to Melaka to my grandfather's farm and ate their fill of durians. I didn't tag along this trip, though as I spent time with Liam.
Above is the lunch I had today at Kenny Roger's Roasters in Leisure Mall. I watched a movie with my friend Fai. The movie we watched was X- Men Dark Phoenix. I had this meal with Fai after. Quarter chicken meal with 4 sides of choice. Twas a healthy and nourishing meal. I mean look at the fruit salad. Mac and cheese was brinking on unhealthy though.
