I cooked my first dish on the induction cooker at Liam's. It was chicken breast. This is also called a chicken piccata. But I am not sure if I can call it a chicken piccata as the sauce is my own recipe. I made chicken piccata a few times before so I was familiar with the cooking process.
I sliced the chicken breast horizontally into 2 thin, flat slices and dredged it in cornflour and salt. It turned out yummy with a kind of thin layer of "batter" around it. It was not too salty despite having some salt in the batter. Was worried it was going to be too salty, but it turned out alright. Was a very forgiving dish for beginners.
I used shitake mushrooms for this dish and my own gravy made from soy sauce, chicken stock and cornflour. After cooking the chicken I dished it out and poured the sauce on top.
The green beans on the side was yum, although a little hard for my taste. But Liam likes them crunchy so it's all good.
It was a good dinner and healthy too.... I am so glad I made this and Liam was really impressed haha! Will be pulling this out if I ever have to cook for people. Below is the recipe. Enjoy!
Chicken Breast with Mushrooms
Serves 2
Ingredients
For the chicken
- 2 chicken breasts
- 2 tbsp cornflour
- 1/2 tsp salt
For the sauce
- 1 cup sliced shitake mushrooms
- 2 tbsp soy sauce
- 1/2 tsp chicken stock granules
- 3 cloves garlic, chopped
- 1 1/2 tsp cornflour
- 2 cups water
Method
- Slice chicken breasts along the horizontal plane, making 2 thin sheets of chicken.
- Dredge them in cornflour and salt in a dish.
- Heat oil in a pan and cook chicken on both sides until no longer pink. You can cook them all in the same pan at the same time.
- Dish out and set aside on a serving plate.
- Remove residue from the pan with the stirrer.
- Mix sauce ingredients - soy sauce, chicken stock granules, cornflour and water. Set aside.
- Heat oil in the same pan. Add garlic and fry until fragrant.
- Add mushrooms and fry until cooked.
- Deglaze the pan with the mixture prepared earlier.
- Let simmer and bring to boil, stirring constantly.
- Turn off heat and pour sauce on top of chicken breasts on the serving plate.
