I have finally gotten around to baking something. On Saturday I made a rice casserole to bring to Liam's to eat for supper. (Ok, Luke is not his real name anyway and I am changing his code name to Liam as it sounds better.. I have amended the previous posts already 😂) Will be calling my bf Liam from now on.
I am so glad I made this dish. It was totally out of the blue. Liam was busy with work this weekend so I wanted to cook something for him to reward him after a stressful day and bring it over. I thought of yummy cheese baked rice with mushroom as I still had half a pack of mushrooms and I had all the other ingredients at my parent's home (we always have cheese and cooked rice). It can be a dinner dish too, not just supper.
It was super easy to make and was delicious! Liam said it was and was really impressed! Really creamy and yum. The mushroom taste was strong and yummy. The only thing wrong was that I used cheddar cheese only.
I wanted to use mozzarella but it was frozen solid and didn't thaw in time. It was a huge ball and wouldn't budge unlike the smaller pack of cheddar we had which thawed quickly. I used all the cheddar... maybe one cup. It would have been even nicer with a cheddar and mozzarella mix! It would have been stringy and stretchy!
We eat basmati rice at home so I used basmati for this casserole. I think it tastes alright with basmati, although it was kinda hard... perhaps normal grain rice would be smoother (but less healthy). I added tomato for a pop of colour and taste. I used cream for this dish and butter too. Seasoned it with salt and chicken stock granules mixed into the cream. Innovative right? All my ideas.
Anyway, it was a great supper and I am happy with it. Below is the recipe. Enjoy!
Ingredients
- 2 cups cooked rice
- half a cup of whipping cream
- 2 tbsp butter
- 1/2 tsp chicken stock granules
- 1/4 tsp salt
- Half a pack of button mushrooms, sliced
- half a tomato, diced
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozarella (I didn't use this as it was frozen)
Method
- Wash mushrooms and tomato. Slice mushrooms and dice tomato.
- Mix whipping cream with chicken stock granules and salt.
- Spread rice into the bottom of a medium casserole dish.
- Add mushrooms and tomato.
- Pour in whipping cream mixture and mix well.
- Lay butter on top of the rice.
- Top with cheeses.
- Bake in the oven at 200℃ for 25 minutes or until cheese has browned slightly.
- Wait till cooled down a little and serve.
