Today I broke open the last 2 avocados in my fridge only to find they were over-ripe with black spots! Oh no, what a let down! I salvaged some parts of them and managed to scrape out a few tablespoons.
I mashed it into a pulp and added salt. I had bought mushrooms specifically for avocado toast. So I fried the mushrooms with olive oil, salt and pepper. I spread the avocado paste on toast and layered it with the stir fried mushrooms and some cubed tomatoes.
The taste wasn't all bad, but wasn't great either. My mom said mushrooms absorb flavour from other things. Since there wasn't a meat dish, my mushrooms were kinda bland. And the avocado was not fresh. The tomatoes kinda didn't add any kick either. It was just a simple open faced sandwich. Don't expect fireworks on your tastebuds. But for a mid-morning snack, I'm ok with it.
So there goes my stash of avocados. 2 last avocados rotten. Next time I will be more vigilant. Notice the state of fresh food and eat accordingly!
