Today I made a nice drink for my lunch. Have been bingeing a lot lately and now have to reel myself back in before I do serious damage. So today I made a lime, pineapple and coconut drink. I added sugar though, as the pineapple was sour. I made a one person portion just with pineapple scraps and a little coconut cream.
The pineapples were from my grandfather's farm. Some of his pineapples are sweet-sour but some are just quite sour. This was one such pineapple. Nobody wanted to eat it and I thought my mom would cook it into a sweet sour meat dish like sweet sour pork. But I guess she didn't end up doing that so I took it upon myself to help finish it.
Anyway, the drink was delicious! Helped a lot by the coconut cream and sugar I suppose. 😂It was cold and tangy combined with creamy. It kinda is like a non alcoholic Pina Colada with added lime. It is not a legit Pina Colada. But still really yum.

Pineapple Lime Coconut Shake
Ingredients
- A few chunks of fresh pineapples
- 1/3 cup coconut cream
- juice from half a lime
- 1 and a half tbsp sugar
- 2 cups of ice
Method
- Put all ingredients in blender and blend till smooth.
- Serve in a glass with a piece of pineapple on the side of the glass as a garnish (optional).
