Today we had a dessert using some mandarin oranges. You know it is going to be Chinese New Year soon when there are mandarin oranges at the supermarket! It was simple to make but the main reason I made it was because it is low calorie. The chia seeds are mostly water and the coconut milk and maple syrup are used in minute amounts. It was mom-approved for dessert!
Basically you wanna soak the chia seeds in water for a few hours so that they get the bulk. Around 2 tablespoons will do if you have a few people eating it. But for a single person, I think 1 tsp would suffice. It was pleasant tasting and guilt-free, which is a win! Below is the recipe... enjoy!
Chia Seed Pudding with Orange
(1 serving)
Ingredients
- 1 tsp chia seeds
- half cup water
- 1 dollop coconut cream
- 1 dollop maple syrup
- 3 segments of a mandarin orange
Method
- Soak the chia seeds in water for a few hours.
- When expanded, refrigerate until ready to eat.
- When ready to eat, put in a dollop of coconut cream and maple syrup.
- Stir well.
- Serve with 3 segments of a chilled mandarin orange.
