We went to my grandparents' house in Melaka for an overnight trip yesterday. I made a cake for my grandma's birthday. It was a success and everyone loved it. It was a durian layer cake.
The sponge cake was made using a great recipe by Sonia Nasi Lemak Lover. It was awesome and light/spongey. Went so well with the whipped cream and durian. I made the sponge cake a night before and brought it to my grandparents' house to assemble it with durian and whipped cream. I have added the text recipe below but credit goes to Sonia's recipe.
So after I made the 2 delish sponge cakes, I left them out on the counter overnight covered with a fly cover. Then the next day I took the cakes, whipped cream, icing sugar and frozen durian to my grandparents' house along with the tools like mixer, spatula etc.
When we arrived there we had lunch with them. Then chit chatted with them/rested until around tea-time and I got ready the cake. I took the chilled cream out of the fridge and whipped it until stiff peaks formed. I also pulled out the flesh from many seeds of durians. I took one cake out of the pan by using a knife around the edges and turning it upside down.
Then I spread the bottom cake with durians and spread a huge amount of whipped cream on top of the durian. Then I took out the other cake and placed it on top, sandwiching it. Lastly, I spread the remaining cream on top of the top cake. (I only used 2 cups of whipping cream but you can use 3 cups and have enough to go around the sides).

Then I brought out the cake and we sang my grandma a birthday song. She was so happy! My mom got her a present and my bro gave her Godiva chocolates from overseas. Apparently Godiva is a mid ranged brand there, while it is super expensive and premium here in Malaysia. He got it for a steal from Costco! We really fooled my grandma... 😂

Below is my grandma cutting the cake with the box of chocs. She was happy that I made her a cake, and told everyone... hehe. My diabetic grandpa also had a small slice! He said the durian was so tasty and asked if it was expensive durian... we said it was his durians from his farm taken from last August and had been in the freezer! He was really impressed that we managed to make cakes from his durian and really proud.

These are what the Godiva chocs look like. They are nice, but I wouldn't pay premium prices for any chocs! Had a good visit to my grandparents' house and we brought back pineapples, bananas, papayas and spring onions, amongst others. Will be enjoying those.

Below are the recipes for this cake. First is the sponge cake recipe and below that is the cake-assembling recipe I made up. Thanks for reading!
Basic Plain Sponge Cake
(recipe adapted from Sonia aka Nasi Lemak Lover)
*makes 2 8” round cakes
Ingredients
- 4 egg yolks (large)
- 20g caster sugar
- 50g corn oil
- 60g milk
- 1/2tsp vanilla extract ( I use Cointreau )
- 90g cake flour
- 4 egg white (large)
- 1/4tsp lemon juices or 1/4tsp cream of tartar
- 60g caster sugar
Method
- Line 2 8" cake tins with baking paper and brush with oil.
- Lightly whisk egg yolk with sugar.
- Add in corn oil, vanilla and milk, stir to combine.
- Add in cake flour, mix well, set aside.
- Add lemon juices into egg white, beat till foamy.
- Gradually add in sugar, beat till stiff peaks.
- Take 1/3 portion of egg white mixture and use hand whisk to mix with egg yolk mixture till light.
- Fold the balance of egg white mixture into egg yolk mixture, combine well.
- Pour batter into the 2 tins. Bake at pre-heated oven at 140°C for 20mins (at lower rack), then increase to 170°C (at lower rack) and continue to bake for 30mins or until a cake tester comes out clean.
Assembly
Ingredients
- 3 cups whipping cream (chilled)
- 3 tbsp icing sugar
- 2 8" sponge cakes
- 6-8 or more seeds of durian, depending on the size
Method
- Remove cooled cakes from tins by running a knife around the edges and turning it upside down. Set aside.
- Remove flesh from durian seeds. Set aside into a small bowl.
- Remove chilled whipping cream from fridge and pour 3 cups into mixing bowl.
- Add icing sugar to mixing bowl.
- Whisk on high until stiff peaks form.
- Place one cake on cake board and spread with durian flesh.
- Spread an ample amount of whipped cream on top of durian.
- Place the other cake on top to sandwich it.
- Spread remaining whipped cream on the top and sides.
- Serve immediately or chilled.
