I love watercress. Yummy veggies really make my day. Combining healthy veggies with healthy soup just puts me in a positive mood for the rest of the day.
To make this soup, you need a bunch of watercress, some salt, red dates and perhaps some meat bones but not necessary. Chicken stock makes it tastier though not necessary. Indeed it is possible to make this dish totally vegan. Vegetable stock is an option if so. Also condiments like dried oyster can be added for taste like we did for this soup.
Basically you boil the meat bones, condiments and dates. At the end you add in the veggies and voila you have yourself some healthy brew. Enjoy!
