I love sausages. This is the reason I have decided not to be a full time vegan. Maybe I am too impulsive. It was great being vegan for a while, and I was glad I tried it. I will eat sausages and eggs but maybe not burgers. I will eat dried shrimp but not a full on steak. Hope I can reconcile my thoughts about cruelty to animals with my diet. Maybe another time, another place, I will pick up veganism again.
Anyway, this sweet potato hash I made was inspired from BBC Good Food but I changed the recipe and method of cooking. Instead of potatoes, I used these purple sweet potatoes my mom bought. They are so deep in colour. Must have many vitamins.
I cooked the ingredients separately in the microwave and it really cut down the cooking time. Then I just pan fried it at the end. I used thyme and mustard to season the dish. Overall it was a simple dish and was nice because of the sausages. I used a pack of 10 frankfurters I saw on offer at Giant. They only cost RM2.55! I don't know if it was a barcode mistake or not but I was pleasantly surprised at the checkout.

Sweet Potato Hash
Ingredients
- 1 pack of 10 frankfurters or other sausages of your choice
- 1 apple, cubed
- 1 medium sweet potato
- 2 tbsp butter
- 2 tbsp olive oil
- 2 tbsp mustard
- 1 tsp thyme
- salt to taste
Method
- Core and cube the apples.
- Slice the sweet potato into large chunks and microwave for 3 minutes or until softened. Take them out, cool them in water and cut into 2cm cubes.
- Cook the sausages in the microwave and slice them into 2cm chunks.
- Heat butter and olive oil in a pan and add apples. Stir fry until apples are browned.
- Add in the sweet potatoes and sausages. Stir fry.
- Add in mustard, salt and thyme. Stir to combine.
- Dish out and serve immediately.
