Pumpkin Spiced Latte

I finally made my fall pumpkin spiced latte! Tried looking for it at Starbucks but no luck. Also this is more of an October drink but it's now December!

Anyway, I didn't expect much from this and so wasn't disappointed. I made it vegan with coconut milk but you can substitute it with frothy milk or add whipped cream on top. And I didn't have pumpkin pie spice so I used mixed spice.

It was a heavy drink and I made it a bit too strong so hope I can still sleep tonight. I think there are lots of calories coz of the coconut milk and pumpkin. Anyway, below is the recipe... Enjoy!


Pumpkin Spiced Latte

Ingredients
- 2 tbsp cooked pumpkin, mashed
- 1/2 cup coconut milk
- 1/2 cup expresso
- 1/4 tsp mixed spice
- 2 tbsp maple syrup
- 1/2 tsp vanilla

Method
1. Heat up coconut milk with the pumpkin
2. Add in spices, maple syrup and vanilla
3. Stir and bring to a boil
4. Turn off heat and pour into a mug
5. Make expresso and pour into the mug with the pumpkin
6. Stir, top with a dash of spice and serve immediately
