Today was Christmas Eve and we feasted with our traditional roast chicken. But I will do another blog post about that later. Let's talk about the cake first. I wanted to make a blackforest cake but we didn't have canned cherries. I had the chocolate sponge cake mix on hand. My brother bought mangoes. So I put 2 and 2 together and thought of a mango chocolate cake! Why not? It is an unusual combination but it worked! The taste was actually quite nice.
It was light and suited the dieters in the house. The only thing is that I should have added more cream and mangoes. If we were gonna eat a cake anyway, might as well go all out. Get the calories' worth. Chocolate and mango do go along well together in this way! I added a chocolate sauce at the last minute and it was kinda complementing the whole cake.
First I made a two 8 inch chocolate sponge cakes and let them cool. Then I diced some mangoes and put them in the fridge. Then I made the icing by adding cocoa powder liquid into whipping cream and beating it on high. Then I chilled the whipping cream. Important to keep everything cool when working with whipped cream. Lastly, I assembled the cake.
I put the first layer and spread it with cream and mango chunks. Added the second layer and added more cream and mango on the top. Then chilled it again. Lastly made a chocolate sauce and drizzled it over the top. Below is the recipe.
Chocolate Mango Cake
Ingredients
- Two 8-inch sponge cakes
- 1-3 mangoes (I used 3 small mangoes)
- 1 cup whipping cream (you can add more)
- 1/4 cup icing sugar
- 1/2 tsp cocoa powder mixed with 1 tbsp water (for the icing)
- 1/4 cup chocolate sauce (use your favourite recipe)
Method
- Cube the mangoes by peeling off the skin and cutting them up. Refrigerate.
- Add 1 cup (or more) of whipping cream into a mixing bowl. Add in cocoa powder solution and icing sugar.
- Beat on high until stiff peaks form.
- Place whipped cream into refrigerator for 15 minutes.
- Lay one cake layer onto a cake base. Spread ample amounts of whipped cream on it.
- Add cubed mangoes followed by more cream.
- Lay on the other cake layer on top. Spread top with whipped cream and add cubed mangoes.
- Drizzle on the chocolate sauce.
- Refrigerate until ready to serve.
