Udon 2 Ways

I have been inspired by intermittent fasting in the past and lately I have been thinking about it seriously again. I believe food begets food. Meaning that if you eat, you tend to feel hungry again later. But if you didn't eat at all, your body uses fat for fuel and the hunger pangs go away after a while. I found that to be true. I did an experiment. I fasted for 24 hours. I felt hungry at the times I would normally eat especially at supper time. But then the hunger went away and I was able to sleep.


After the 24 hour fast, I broke fast with Udon noodles. By the way, I wasn't hungry when I broke the fast. I hope to practice intermittent fasting if I can. But I am having a hard time being vegan at the moment. It is very inconvenient where I live. Also, my default eating pattern is eating huge amounts of junk food like chips, cheese and sausages at supper time. If my diet phase dies down again, that is what will likely take over once again. I hope I can practice IF long term, though.

Anyway, I have been into udon noodles as I saw them in the supermarket and decided to make my own. These are the 2 styles I have made them in. Both were alright although I really prefer them when eaten at a restaurant.


This is the first one I tried. It is basically Udon noodles in miso soup with veggies like carrot and kailan. Below is the recipe.

Ingredients
Method
  1. Wash and cut the kailan. Slice or julienne the carrot. 
  2. Heat water in a pan until boiling. 
  3. Add in carrots and kailan. Boil until cooked.
  4. Add in miso paste and stir.
  5. Lastly, add in udon and cook for around 30s or so, depending on noodle. 
  6. Dish out and serve immediately.

This is the second way I made them. It is dry Udon with 2 poached eggs and spring onion. I made them earlier today. They did not taste as good as the miso one. Mainly because the egg was a bit off-putting. I don't know how to make it nicer. Maybe add some flavour to the egg or make a sauce. I really wanted to like it. I got the idea when I ate it at a restaurant. Somehow theirs was more palatable. Below is the recipe.

Method
  1. Boil water in a pan. Add 1 tsp of salt to the water. 
  2. Meanwhile wash and chop the spring onion. 
  3. Once boiled, add in the Udon and cook for around 30 seconds, depending on the noodle. 
  4. Remove and strain the noodles. Put in a plate. Set aside. 
  5. Crack one egg into a small bowl. Pour it into a ladle. Place the ladle with the egg in the boiling water and poach. Carefully remove and put it on top of the Udon. 
  6. Repeat for the other egg. 
  7. Top with soy sauce and spring onion. 
  8. Serve immediately.
