Kimchi Fried Rice

Kimchi is nice and I like it, although some people don't. I guess it is spicy, fermented and sour so it doesn't suit all tastebuds. It is good for gut health so I try to eat it, as I already like the taste. I bought mine from a Korean convenience store and it was quite expensive. I sometimes eat it with rice and my mom's dishes for dinner.

I decided to share my tub of kimchi so I made kimchi fried rice for everyone! I was inspired and looked it up online. Decided to create my own recipe. I fried garlic and onion then added the kimchi. Then added the rice, stirred a little to break it up and added seasoning. Lastly got my mom to fry a sunny side up for each of us. (I dare not attempt this, but will try to soon... need to learn how to make sunny side up. It is so difficult to lift it out of the pan!)


Anyway, it was nice. My parents liked it though I feel it could have been better with some more soy sauce. Didn't wanna over-season it. Better to have less than too much. The seaweed gave it that punch and the egg was nice. My friend Adia gave me the tip to add the seaweed. So I used a scissors to snip strips of seaweed.

I am quite happy I learnt how to make kimchi fried rice. Seems popular here in Malaysia, or maybe anywhere for that matter. I think fried rice is a quick and easy dish. A staple for students or busy people. Add the kimchi and it's a fine meal.

However, I don't eat fried rice often as it is loaded with refined carbs. Might as well inject sugar into the bloodstream. This is a once in a while treat and I enjoyed it. It was really yummy. Below is the recipe.


Kimchi Fried Rice
serves 4

Ingredients
Method
  1. Chop garlic and slice onion.
  2. Heat oil in a pan and fry garlic and onion until fragrant. 
  3. Add in the kimchi and stir a little bit.
  4. Add in the rice and stir.
  5. Add in the seasoning of soy sauce, sweet soy sauce, black pepper, and sesame oil. 
  6. Stir to combine.
  7. Dish out onto plates for each person. Top with seaweed strips. 
  8. In another non stick pan, fry each egg individually sunny side up. Place a fried egg on top of each mound of rice.
  9. Serve immediately. 

Note - After serving, I accidentally left the fire on and the rice that was still in there dried up and became crunchy. It was so yum! Just a note, in case anyone wants to experiment with this. 😂
