This recipe has been used many times since I became a part time vegan. My mom will cook this in many variations for dinner quite often. It is a nice tofu dish and I love mushrooms so it's an easy way to cook for me to accommodate my diet! I eat this almost twice a week and it's nice every time.
Well, start with some basic ingredients of tofu and enoki mushrooms, washed. Add some sliced carrots for a pop of colour. As usual, use garlic as a base note. And add some Chinese celery or parsley to add freshness. This whole dish has so few ingredients! Also added is oyster sauce and cornflour later on while cooking. Soy sauce is optional.
First, slice the tofu and fry in oil on both sides until browned. Then dish it out and set aside. This is so the tofu is crispy on the outside. The mushroom sauce goes on top later on.
Then, fry the garlic and add in mushrooms and carrot. Stir fry a while and add a bit of water. Once cooked, add in oyster sauce and mix in.
Add water and cornflour until thickened. Lastly, add the tofu back in and stir to coat. Add in parsley at the end. Then turn off the heat and dish out.
Voila! You have a nice tofu dish that is simple and nutritious! And easy to make. Dinner is served. Eat with white rice and a veg. Below is the recipe.
Tofu with Enoki Mushrooms
Ingredients
- 3 blocks of firm tofu
- 1 bunch of enoki mushrooms
- one inch of carrot, julienned
- A few sprigs of parsley (I used Chinese celery)
- 3 cloves of garlic, chopped
- a dollop of oyster sauce
- half a tsp of cornflour, dissolved in a few tbsp of water
Method
- Prepare all the ingredients. Wash all ingredients and julienne carrots. Chop garlic and parsley.
- Slice the tofu into 1cm slices. Fry on both sides until browned. Dish out and set aside.
- Fry garlic until fragrant. Add in mushrooms and carrots. Add a little water.
- Add in oyster sauce and fry till coated. Add in cornflour and water mixture. Stir well.
- Add in tofu until coated. Lastly, add in parsley. Dish out and serve immediately.
