I have been dieting lately and it's going well so far. I like Greek salad because of the feta cheese and olives! Yum. But now that I am vegan, I have to modify it and make the "feta cheese" out of tofu! Hmm... interesting. In the end it did taste good and I was able to fool myself a little that it was cheese.
Anyway, it was yummy. I made the "feta" tofu one day before so it has a chance to absorb all the flavours before I put it in the salad. For the dressing I just put in some of the liquid from the jar of "feta" tofu. It made sense to do that so I don't waste the liquid which is edible too! The recipe for the "feta" tofu and the Greek salad is below. Enjoy!
Vegan "feta cheese" tofu
Serves 2
Ingredients
- 1 piece of firm tofu
- 20ml apple cider vinegar
- Juice from half a lemon
- 30 ml water
- 2 tbsp extra virgin olive oil
- Dried herbs eg Rosemary, Thyme, Basil
Method
- Boil a small pot of water and cook the tofu for a 1 minute. Take it out of the water, drain and set aside.
- Put the vinegar, lemon juice, water, olive oil and herbs into a glass jar. Shake well to mix.
- Once the tofu has cooled, cut the tofu into 1cm cubes.
- Put the cut tofu in the jar gently so the tofu doesn't break up.
- Refrigerate until ready to eat. Keeps for 3 days.
Greek Salad
Serves 2
Ingredients
- a few leaves of Romaine lettuce
- 1 tomato
- a handful of olives
- "feta" tofu
- liquid from the jar
Method
- Wash the lettuce and tomato.
- Rip the lettuce into bite sizes. Cut the tomato into cubes.
- Arrange on a salad plate.
- Add olives.
- Spoon the tofu on top of the salad.
- Spoon some of the liquid from the jar on top of the salad too
- Serve immediately
