I made this really nice vegan cheese dip. Although it doesn't really taste that much like cheese, it is still yum in its own way. It tastes like a rich yet healthy cheese sauce and can be dipped into with crackers or veggie sticks. I like both. I tried celery and crackers.
It is made from potatoes and carrots! So in fact you are dipping celery into veggies. Although potatoes do have calories as well.
I got the recipe here. I didn't add the olive oil, though, as I didn't want it to be oily. Hope it's ok that I skipped the oil. I wonder how it would taste with the oil. Maybe next time I'll add it. Another thing they added is nutritional yeast. It tastes kind of like cheese. It gives the dip its cheesy flavour.
I made a large batch and these pictures only show a little bit in a bowl. Actually I have a larger container of this dip in the fridge. I eat it as a snack for supper when I get the midnight munchies. I didn't buy nacho chips though as I think it's nice enough with celery or crackers.
There is a lot more of it and I will enjoy it over a few days with some celery my mom just bought. My dad likes it too!
Today I had it for lunch and it was yum with crackers and miso soup. Below is the miso soup I bought. It is really easy to make. I just added hot water and stirred until completely dissolved.
Below is my long anticipated lunch. I did intermittent fasting and my first meal of the day was 4pm. I was waiting for this meal and finally got to eat it.
My lunch was miso soup, dip with celery and crackers, and a mug of coffee. It is quite a healthy lunch I think. Really didn't eat many crackers. I enjoyed it and look forward to more healthy meals. I actually crave healthy stuff now. 😋
