Tempeh and Long Beans Simple Vegan Dinner

Today my mom made mooncakes; her second batch this season. She was at it the whole day and painstakingly crafting her pretty mooncakes. Again, we can't eat them yet as they need time to settle, and I can't wait to eat them and maybe photograph them again tomorrow. There is pandan mooncake this time and it should be yummy.

Anyway, since my mom was busy, I was assigned the task of cooking dinner! So, my mom suggested I cook long beans. I already know how to make them as this dish is simple and a family favourite. It is long beans with tomato.

Also, my parents already had leftover fish from yesterday to heat up and eat today. But there wasn't any protein dish for me so my mom suggested I cook tempeh. It was easy to cook. Just fried in oil. And was really yummy.


Below is the tempeh. Basically it is cut into strips and fried with oil, with a sprinkle of salt once cooked. Really simple and suitable for a vegan person for dinner.


After frying it turns a golden brown. They can be eaten with chilli sauce or ketchup.


The next dish was long beans with tomato. Below is the recipe.


Long beans with tomato

Ingredients
Method
  1. Chop up garlic
  2. Chop beans into 1 and a half inch sticks
  3. Dice tomato. 
  4. Heat oil in a pan and stir fry garlic until fragrant.
  5. Add in beans and tomato and fry 1 minute until starting to soften.
  6. Put the lid onto the pan and allow to simmer until tender
