On Monday, the same day I made the tacos, I also made salsa. This is a simple, easy to make dip and can be eaten with vegetable sticks and crackers. I really enjoy it and I made a big batch. I made it from canned tomatoes, onion, chopped tomatoes, Chinese celery (we didn't have cilantro), chilli padi and lime juice.
It went well with the tacos and I had plenty to eat as a dip for snacks the next few days. It is a low fat alternative snack rather than the packaged snacks I used to eat. I am guilty of eating packaged snacks like chips and Oreos in the past, and I am trying to cut down on those unhealthy foods.
This is the large jar of salsa I made. It seems to be able to last through the week, hopefully. Or it will be finished soon. Anyway, the recipe is below.
Homemade Salsa
Ingredients
- 1 large tomato, diced
- 1 can of whole tomatoes
- a few stalks of cilantro (I used Chinese celery because I didn't have cilantro)
- 1 medium sized red onion, diced
- juice from 3 limes or half a lemon
- 2-3 small red chillis (optional... these are to add spiciness)
- a pinch of salt
Method
- Chop tomatoes, cilantro and onion and put into blender
- Add in the can of tomatoes together with the liquid
- Squeeze the limes and add in the juice
- Add a pinch of salt
- Add in the small chillis (optional)
- Pulse all ingredients in a blender until reached desired consistency.
