Quinoa Lunch

Yesterday I made some quinoa for lunch. Quinoa is a grain from a plant in the spinach family, and is less starchy than other grains. It has protein too. And lots of vitamins and antioxidants. It is a superfood! But I eat it mostly because I like how it tastes. It has a sort of nutty texture.


Anyway, I boiled the quinoa with 1 cup water and third of a cup of quinoa to make a single person portion. I boiled it until it was kind of translucent and the water absorbed. I added a little water at times too.

Below are the ingredients that went into the quinoa dish. Clockwise from top - quinoa, walnuts, grapes (de-seeded) and blanched kailan from our garden. I realise I should have toasted the walnuts before adding them. They were a little bitter.


Anyway, the dish was nice and appetising and easy to eat. However it lacks fat. I read it is advisable to consume oil together with nutritious foods. This is because some of the vitamins are fat soluble, so it would aid absorption. I think the next time I would add some olive oil. It was a good try anyway and I like this kind of whole food meal.
