I need to eat healthier snacks, that's for sure. I kept eating Oreos and chips just coz they were vegan. Some were even not vegan as they contained some animal sourced flavourings! I needed a break from processed food. And fried food and sugar. Need to lose weight now.
Anyway, last year I tried nori wraps and now I'm trying to bring them back into my diet again. They are so healthy and good for you. Not to mention really delicious! Basically they are veggies sliced thinly and wrapped in a nori sheet.
So I sliced carrots and cucumbers into matchsticks and lay them flat on the nori sheet like below. I guess they could be thinner but my knife skills have yet to be improved!
Then I rolled the nori wrap starting from one end.
Once I got to the end, I sealed it with water. It became a legit nori roll.
Lastly I cut it into half. So its easier to hold and eat. I ate it with soy sauce. It really is yummy! I wished I had some wasabi to go with it too. Anyway, it is one healthy snack and I really wanna eat this more often from now on. This, and another veggie snack - veggies with dips. Will try to make a vegan dip soon. Meanwhile hope my diet goes well!
