Tomato Pasta

Yesterday I cooked lunch for me and my parents. I decided to make a simple pasta with a tomato sauce. It really is really easy. It just uses lots of garlic, a can of tomatoes and some seasoning. Admittedly it is kinda plain. Would go well with parmesan cheese but I am a vegan.

My dad complained there was no meat! Haha... he must be thinking of bolognese.. I won't cook meat in pasta coz I like my pasta plain and classic. I like vegetarian pasta. Marinara sauce is my favourite.

We have lots of basil leaves from our herb garden. I plucked a few sprigs. I am so lucky we grow herbs! We have oregano, chinese celery (something like parsley) and spring onion as well. It takes time for it to grow back though, for the chinese celery and spring onion. But the basil and oregano are plentiful. If you don't have basil leaves, you can use other herbs, or dried herbs.

The can of tomatoes were whole tomatoes. But you can use diced tomatoes. It is better than tomato puree as you have chunks. It gives a bite to it. If using whole tomatoes (which was what I had in the larder) you need to mash it with a wooden spoon or spatula once in the saucepan.

Ingredients
Method
  1. In a pot, boil the pasta according to packet instructions. (however much you like, maybe 2-3 ppl portions). Drain and set aside. 
  2. Chop up garlic and wash basil leaves. Open can of tomatoes. 
  3. In a saucepan, fry garlic in olive oil until fragrant. 
  4. Add in can of tomatoes. Mash with wooden spatula. Simmer a while. 
  5. Add in salt and pepper to taste.
  6. Add in basil leaves. Stir until wilted. 
  7. Turn off the heat. 
  8. Serve on top of pasta and enjoy.
