Since becoming a vegan, I have found a new love for tofu. My mom cooks tofu for me almost every day. Thanks mom! When we go to the supermarket we often check out the tofu section. I like both firm tofu and soft tofu. They go well with different dishes. Nowadays my mom likes to cook tofu dishes with mushrooms! They are so yum! I have loved mushrooms all my life. And now I get to eat them so often! Maybe it is my reward for being vegan.
Here is one dish my mom whipped up a few days ago. We had a petula growing in our garden and my mom harvested it. So she decided to cook this dish. A petula is a green gourd and it is soft and spongy. The dish tastes slightly sweet even without sugar added! Must be the fresh petula and dried wolfberries. It is so yum with enoki mushrooms! The recipe is below.
Ingredients
- 2 pieces firm tofu
- 1 small petula
- 1 small packet of enoki mushrooms
- 1 tbsp dried wolfberries
- 2 cloves garlic, chopped
- 1 tbsp sliced ginger
- 1 tsp soy sauce
- Pinch of chicken stock granules
- Pinch of salt
- 1 tsp cornflour dissolved in 2 tbsp water
Method
- Slice the firm tofu. Use a peeler to peel the petula. Cut the petula into slices diagonally. Wash the enoki mushrooms and wolfberries. Chop the garlic. Dissolve cornflour in water.
- Heat 3 tbsp oil in a pan and fry the tofu slices on both sides until crisp. Dish out the tofu and set aside.
- Using the same oil, fry garlic and ginger until fragrant. Add in petula and stir fry until softening around the edges.
- Add in 3 tbsp water and enoki mushrooms, and stir fry until softened.
- Add in 1-2 tbsp more water if needed. Add in cornflour mixture, soy sauce, salt, chicken stock granules and wolfberries. Stir fry until wolfberries are softened.
- Add in the fried tofu and mix in till heated.
- Dish out and serve.
