"Spinach" egg drop soup

Yesterday we ate some of the Vietnamese veggies I blogged about in the previous post. I am still not sure what the veggies are called. It has small curly leaves and it tastes like spinach or a soft veggie. Think it is Vietnamese.

My mom made a yummy egg drop soup! It is really easy to make and you can use any green veggies. Preferably leafy greens that are soft once cooked. Below is the step by step.



1. Pluck off the leaves of the leafy green. Wash veggies thoroughly.


2. Stir fry garlic and add water. Around 4 cups.


3. Add in veggies and cook them until they are soft. Crack an egg into a bowl and beat it. Then slowly pour the egg into the soupy veggies.


4. Let the egg sit and cook by itself. When the egg is cooked, stir lightly and dish out.


5. Pour it into a large bowl and share amongst smaller bowls! It serves quite a few people although you can keep some as leftovers too. Enjoy!

Edit - I now know the name of this veggie... It is Brazilian spinach!
