Today I decided to make fried noodles. My parents went out so I made lunch for them to come back and eat. I decided to do something nice for them for once. They do so many nice things for me. They were really happy I cooked lunch and said it was nice for a change and hope I do this more often. 😄I hope so too!
The noodle was instant noodles and I cooked 2 and a half packets. After mixing in with the veggies it was a lot. Luckily we finished it. But now I learned that I have to adjust the noodles for the amount of vegetables in it or it will be a lot in volume. I used carrot and cabbage for the veg and tofu for protein. It tasted surprisingly good! The noodles were slightly over done, but it all came together nicely.
Anyway the recipe is below. It is quite simple.
Fried Noodles
Ingredients
- 2 packets instant noodles
- 3 leaves large cabbage
- 1 carrot, sliced into sticks
- 1 spring onion for garnishing, chopped
- 3 cloves garlic, chopped
- 1 piece firm tofu, sliced into small pieces
- 1/3 cup soy sauce or to taste
- 1 tbsp sesame oil
- 1 tbsp rice wine vinegar
- 1 tsp cornflour
- 1/2 tsp thick soy sauce
Method
- Cut the cabbage and tofu into bite sizes. Julienne the carrot. Chop the garlic. Mix the soy sauce, sesame oil, vinegar and cornflour into a small bowl.
- Cook the noodles according to packet instructions, drain and set aside.
- Heat oil in a wok and fry the tofu on both sides. Take out and set aside.
- Using the same oil, fry garlic until fragrant.
- Add in carrots and cabbage. Fry for 1 minute. Add water if needed. Add in tofu.
- Add in soy sauce mixture and thick soy sauce. Stir.
- Add in the cooked instant noodles and mix well.
- Garnish with chopped spring onion and serve. Optional to serve with a spritz of lime.
