Today, I finally got round to making a vegan quiche. Hope this is the first of many vegan recipe experiments! I used this recipe I found on Pinterest. Yup, when I said I wanted to make a vegan quiche, the question I got asked was... how do you make a vegan quiche? What can you use to substitute the egg? The secret is flour and cashews! It turned out really good and was really creamy.
I used the baby spinach I bought from Jaya Grocer. I did not want to make a proper crust and instead of a crust, I used spring roll pastry (similar to filo pastry). It was surprisingly interesting and delicious! My mom helped me layer it on. We must have used at least 12 sheets! Each brushed with olive oil. The sides were folded in. Thanks mom! I couldn't have done it without her help.
Also, I added nutritional yeast to the recipe so it would taste slightly more cheesy. And instead of the vegan cream, I used almond milk. I was afraid it was too runny and was not going to bind... luckily after baking it firmed up. I think the cashews helped too.

I tried to layer the vegetables but everything got kind of messed up in the liquid and you can't see the design. But it looked rustic, and tasted nice. I think the taste is kind of nutty and creamy. The spring roll pastry was crunchy and so tasty. I like it and my parents said it was interesting.
I hope I get to bake and cook more soon. And I hope I get the hang of being a vegan cook!
