Avocado Pasta

Last week I made a yummy avocado pasta using up my 2 remaining avocados. It was so yummy. The only drawback is that it uses a lot of oil. I did cut down the oil though. But the taste was good. Really creamy even without any dairy. Just from the avocados. I got the recipe here. So simple to make. But make sure the utensils are clean as it is a no cook recipe, just raw. 


Anyway, it was a good try. I didn't put enough basil leaves so that's why the colour is not green enough. I mixed the avocado mixture into the al dente pasta and it was delish!

Now I am looking for more vegan recipes to try. I hope I can find a tofu one. Or another dip. Or even another pasta! Thinking of a pasta salad. Yum!
