As I have mentioned before, we have lots of limes from our relative's place... we had a huge bag. Then we got more limes from my grandfather in Melaka. I forgot about them for a while as I was busy with CBS, until I got sick of seeing them taking up space in the fridge.
My mom inspected the limes and sorted through, throwing out a few rotted ones. Other than those, most of them were fine. They keep surprisingly well. They looked and tasted normal. So I started brainstorming what to do with the limes.
I told my bro to buy some Sprite and I made a soursop apple limeade. It wasn't very good. The soursop was already over-ripe. And adding the apples made it grainy. I had to strain it to get out the apple and soursop bits. Not nice.
Then I planned to make sambal belacan. I will do this soon. And I settled on lime mousse. It is cheese based. I squeezed a bunch of limes into a jar. For future use. I noticed my finger with the indelible ink from voting was peeling because of the limes! It kind of works. Other people said bleach works. At least no more black finger.
Anyway, my lime mousse was really creamy and nice. I made 8 of them. I will put the recipe below. Everyone was really full from dinner so they couldn't eat my mousse. My parents shared one cup. My bro and his gf shared one cup. And my other bro didn't eat it at all. I had one to myself. Yummy!
They look really messy and it's ok for me. It's rustic! It had a biscuit base which went really well, giving it a crunch. The mousse is creamy, with a hint of lime to give it that kick. There is a lot of whipped cream so it's like eating cream. It is pretty cheesy too, so it is thickened, kind of like a mix between whipped cream and cream cheese... which is exactly what it is! I liked how they turned out! 😋
Ingredients
- 8 oz packet of cream cheese, softened at room temperature
- 1 cup of whipping cream
- About 8 wheetameal crackers or graham crackers
- 1 tbsp butter
- 2/3 cup icing sugar
- A few tbsp lime juice to taste
Directions
- Crush crackers in a ziplock bag with a rolling pin.
- Mix with melted butter
- Press into base of 8 cups (or 6 if larger)
- Put cream cheese in mixing bowl and beat on medium until creamy
- Add in icing sugar and lime juice and beat till combined
- In another mixing bowl, with the whisk attachment that comes with the mixer, whisk whipping cream on high until soft peaks form. Do not overbeat.
- Fold whipped cream into the cream cheese mixture. Beat on low until just combined.
- Spoon mixture into the prepared cups.
- Refrigerate until ready to eat.
