Lime Yogurt Cake

Yesterday I made a lime yogurt cake. It is from a Weight Watchers recipe for Key Lime Pie found on Pinterest. I was eager to try the recipe as my mom is on a diet, and I wanted to make a dessert using limes as we still have lots of limes from my relative's place. This recipe is low sugar and low fat. I will share it below, from Weight Watchers.


So I bought a tub of yogurt and some jello just for this recipe. Also, I squeezed a bunch of limes. I kept some of the lime juice in a jar to use for my next recipe, lime sorbet. And I used about half a cup of lime juice for this cake.

Basically the cake is made from jello, yogurt and cool whip with a biscuit crust. I did not have cool whip so I used whipped cream from a spray can. I needed to use it up anyway. Then the jello I bought was a small portion, just 400ml, which I did not notice when I bought it.


So the cake did not set well coz not enough jello. It wasn't Jello brand. It was some other brand. I made the base from scratch. Then I mixed the yogurt and whipped cream with the lime juice. Lastly I made the jello with hot water and added it in. I also added a drop of green food colouring.

The cake was far from perfect. My mom asked me not to share this on my blog, but I did anyway as I like to share my adventures in baking.

The cake was a bit runny as the jello was for 400ml of water, not enough for the yogurt and whipped cream. Also, it was sour due to the yogurt and lime. I guess it is healthy, but not very. Still has whipped cream and biscuit. I will share the recipe below.

Directions
  1. Dissolve jello in boiling water. Cool slightly.
  2. Stir in yogurt.
  3. Fold in cool whip
  4. Pour into crust and chill
  5. EAT! 

Thanks for reading! My parents called my cake the sour cake! But it is still edible and my parents each had a slice after lunch today. 😂I hope anyone who tries it learns from my mistakes and makes a better key lime pie. I will go and have a slice now.
