Lime Sorbet

Remember I said in an earlier blog post that we had lots of limes? Well I nearly finished it making a lime sorbet! There is still some juiced limes left in a jar, though. I juiced all the limes a few days ago. It keeps well in the fridge.

I juiced the limes and it filled a jar. Then I used 1 cup of that juice to make my sorbet. I used an ice cream maker. I think it was rather difficult to freeze as it took a long time to freeze and kept melting in our Malaysian weather every time I took it from the freezer out to scoop. By the time I scooped it into the bowl the sorbet in the bowl would melt quickly and I had to eat it fast.

Anyway, below is the recipe. I am not sure how it would taste with less sugar or less lime juice. This recipe is heavy on the sweet and sour. It is very intense. I wish I could tone it down a bit.

  1. Mix the lime juice, sugar and water in a pan and bring to a boil then simmer for 2 minutes until the sugar has all melted. 
  2. Let it cool to room temperature then chill for at least 2 hours in the fridge
  3. Make the sorbet in an ice cream maker according to manufacturer's instructions.

So there you have it, simple lime sorbet. I keep feeling the craving to eat it. But I have to be careful of the sugar! There is a whole cup of sugar in that pint or so of sorbet! I simply cannot allow myself to eat it all or I will get diabetes. The next time, I will have to try recipes with less sugar.
