- Mix the lime juice, sugar and water in a pan and bring to a boil then simmer for 2 minutes until the sugar has all melted.
- Let it cool to room temperature then chill for at least 2 hours in the fridge
- Make the sorbet in an ice cream maker according to manufacturer's instructions.
So there you have it, simple lime sorbet. I keep feeling the craving to eat it. But I have to be careful of the sugar! There is a whole cup of sugar in that pint or so of sorbet! I simply cannot allow myself to eat it all or I will get diabetes. The next time, I will have to try recipes with less sugar.
