Today I made a batch of mochis... been wanting to make a dessert but can't decide what to make. It was either macaroons (super difficult), cherry cheesecake, sugar cookies or this. I thought I would go for the lighter option to get myself out of this baking rut and try making things again.
I kind of wanna experiment and find the best mochi recipe and tweak it. The last batch of mochis I made were on Chinese New Year. This time round however, I think I have found the best recipe and will use this one from now on. I tweaked it a little. Below is the recipe. I adapted it from here.
Ingredients
- 1 cup glutinous rice flour
- quarter cup sugar (to taste)
- Slightly less than 1 cup water
- Food colouring - 1 drop
- Oil for coating container and plastic knife
- 2 tbsp cornflour
- Chocolate spheres or pieces
Instructions
- Spread a microwave safe container with cooking oil using a brush
- In another bowl, mix flour and sugar.
- Add in water and food colouring and mix till smooth
- Transfer to oiled microwave safe container
- Microwave on high for 2 minutes.
- Take out and check. If not firm, microwave for 20 seconds more. It should be translucent, and firm. Do not over cook.
- Let mixture cool for 2 minutes or until cool enough to handle
- Dust a plate with cornflour.
- Pick out 1 tablespoon of the mixture at a time with the oiled plastic knife. Wrap it around the chocolate sphere and pinch to seal. Then roll the ball in the cornflour to coat the mochi.
- Repeat until the mixture is finished (I had 6 mochis)
I made the recipe as a tester... with just 1 cup of glutinous rice flour and water each. So I only got 6 mochis. If you want, you can make 1 and a half cups each or even 2 cups each... as long as the ratio of water to glutinous rice flour is 1:1. I put the water a little less than the flour coz I want a doughy texture.
For the sugar, it's up to you. I put a quarter cup and it was not so sweet. The sweetness came from the chocolate filling.
Anyway, this was really fun to make... and very fun to eat too! It's delicious!
