Lime Jelly

I made a lime jelly with all the limes that we have... a big bag. They were from our relative's place. We still have many limes left. I juiced the limes and painstakingly sliced the peel. It was difficult to slice as the limes were so small.

Anyway, I used kunyaku jelly powder and I boiled water and added in the powder. They were more like crystals not powder. Then I added in the lime juice. Around half a cup.

For the mould I used one huge round fish shaped jelly mould and small jelly moulds. For the fish one, you can see the shape but it doesn't really show up on camera.

Then for the fruit filling I used mandarin oranges and mulberries that we had too. It turned out really colourful and looked good. The taste was good... just a jelly consistency and not too sweet. It wasn't really sour like I thought it would be. The lime peel were not sliced thinly enough so you could bite the bitter peel.

Anyway, it was fun to make and eat. They looked good and they are healthy and fruity!
