I made a dessert again and it's using fruit we have. My mom went to visit a relative and brought back a huge bag of limes! These are the green small limes they use at the mamak to make teh-o-ais limau.
My mom found a recipe for Key Lime Bars though the limes we used weren't key limes.... just small limes. Anyway, they were delicious and I am concluding that any recipe with lemon or lime will be nice. Following the success of my lemon cheesecake, these lime bars are just as nice.
They are made with a biscuit base, and the cheesecake layer is cream cheese, sweetened condensed milk and lime juice with lime zest. I found squeezing the limes easier than juicing a lemon. We used some coconut cookies for the biscuit base and it was a good idea. I added a spritz of canned whipped cream on top of each piece as a garnish.
Below are the limes my mom picked up from my relative's place. It was an even bigger bag a few days ago. I made teh-o-ais limau 2 times already and I'm planning to make lime jelly. So many possibilities!
