Mushroom Dishes

Yesterday I made 2 mushroom dishes - Grilled Portobello Mushrooms and Mushroom Swiss Melts. I used up all the remaining fungi and now I have no more... 😧


Anyway, my parents and I enjoyed them and knowing me, I love mushrooms and savoured every bit of my premium mushrooms. My precious, premium mushrooms...

They turned out really well, and luckily the mushrooms were fresh. The portobello mushrooms absorbed all the sauces when I grilled them. They were juicy and succulent... very nice! Below is the recipe.

Grilled Portobello Mushrooms

Ingredients

  1. Marinate the mushrooms in the salt, soy sauce and pepper for around 3-4 minutes
  2. Heat olive oil in a pan and fry onions for 2 minutes and then add garlic and fry for another 2 minutes or until browned. Remove from pan and set aside. 
  3. Grill the mushrooms for 5 minutes or so and flip over and grill another 3 minutes or so until tender. Cooking times vary according to the size of the mushrooms.
  4. Serve the mushrooms with the fried onion and garlic on top and enjoy!

Now with the Mushroom Swiss Melts, I toasted the bread in the pan after grilling the portobello mushrooms and the bread soaked up all the flavours. Also, the sauce was thick and cheesy. I didn't fry the mushrooms too long so they still maintained their spongy texture but if you want softer mushrooms ala Burger King's Mushroom Swiss, add a few minutes more to the cook time until you reach the desired consistency. They also were delicious and super satisfying. Below is the recipe.


Mushroom Swiss Melts

Ingredients
Directions
  1. Spread each slice of bread with butter and toast them on both sides in a non stick pan. Remove and set aside. 
  2. Melt the 1 tbsp butter in the pan and add in the onions. Fry until translucent. Add more butter if necessary. Around 2-3 minutes. 
  3. Add in mushrooms. Stir and cook for around 5 minutes or until reached desired texture. 
  4. Add in salt, soy sauce and pepper to taste.
  5. Add in flour and stir for around 1-2 minutes
  6. Add in cheddar cheese and stir around 1-2 minutes or until melted
  7. Add in milk and stir around 3-4 minutes until well combined. 
  8. Assemble by placing a large dollop of the cheese mushroom mixture onto a slice of toasted bread. Spread it around a little and serve immediately. 

So these were the yummy mushroom dishes I made. My bros both drooled over the pics and said they looked really good. I bet they wish they were here. I enjoyed making and eating them.

I realize a pattern in my cooking style - I like Western dishes! Especially recipes from Pinterest that I receive in my feed. My mom likes Asian cooking so I guess sometimes when I cook, it is a change in style. 

But my parents welcome trying new things and they enjoyed these mushroom dishes so that's good. Thanks for reading!
