Dad's Birthday Cake - Lemon Cheesecake

On Sunday, after a heavy dinner, some of the guests adjourned to our house and we had a cake cutting ceremony for my dad's birthday.

I made a lemon cheesecake with lemon glaze. This is the first time I am making a lemon glaze. The last lemon cheesecake I made with my friends had a lemon curd topping. The glaze is far nicer!!


This is how it looks like with the layers. The glaze dripped down the sides right after I took this photo.

It had a biscuit base made with Jacob's Weetameal crackers. The cheesecake itself was smooth as I mixed it well. It had lemon juice in it so it was tangy.

The top of the cake was so smooth and shiny. It looked like a mirror and reflected the candle light. That is lemon glaze for you. The lemon glaze was really sweet and quite sour. It was sooo tasty.

After my dad cut the cake we cut small slices for everyone. My dad had 2 slices. My grandma finished hers and looked like she wanted more, which is impressive as she hardly ate anything for dinner. She must have been saving her appetite for my cake for dessert!

She showered praise on me and said I was very clever. And she said my cake wins first prize! Lol... thanks, Grandma!

I really surprised myself at how well this cake turned out too. It was one level up. It is a pro recipe and I will be using this recipe again if I ever want to impress people. You can find the recipe here.
