Vegan Lemon Tarts

Yesterday I made some really healthy, vegan and natural tasting lemon tarts. They do not have any flour, and are made with almonds as the base. Hmm... interesting, I thought. The filling is made with lemon juice, agar and coconut cream. It was a healthy, interesting and imaginative dessert and I really enjoyed it. Guilt-free!

After all the unhealthiness of the week, I ended it with a healthy dessert like this and it was refreshing. The tarts were really sharp and sour; extra tangy. That's what I like about it. The base was a bit dry when I first blended it. It has raw almonds, dates and desiccated coconut. I added a little coconut oil so it wouldn't stick to the mold. I guess it worked as the tarts came out from the molds nicely.

It took a while to press the base into the molds because butter fingers, but once pressed, it holds its shape. I wonder if this recipe would work with a biscuit crust. But then it wouldn't be so healthy.

The filling was made with a lot of lemon juice (half a cup!), coconut cream, sugar and agar powder. I put extra agar as I was afraid the filling wouldn't hold its shape, but I had nothing to worry about as it held its shape very well.

The filling appeared solid and was extra firm... like a block of agar. I thought it was awesome to bite into that tangy, firm and smooth filling.

I heated up the filling to combine but after that it was no bake. Just pour into the molds and wait. It firmed up so fast once cooled. I was glad I didn't wait for it to cool completely or it would be solidified. I guess it is because of the extra agar powder I put in!

I decorated the tarts with flowers and mint leaves from the garden. It was a cute flourish and made it look good.

Overall it was a great dessert and I do not regret making it. It went smoothly and I was happy with the way it turned out. No complaints. Even when I put too much agar, it was fine. I love recipes that are forgiving as I am a blundering clunk sometimes when I bake. 😅 Now back to unhealthy. Or maybe just eat moderate amounts... thats what I always tell myself before devouring things... Chinese New Year... do your worst!
