Pecan Cookies

I made pecan cookies today. They were so yummy when I took them out of the oven. But then I loaded them with sugar frosting and they were way too sweet!

I read that sugar helps to calm people instead of make them more hyper. Firstly, after digesting sugar and it reaches the bloodstream, we get an insulin overload which makes us sleepy. Also, sugar reduces the production of cortisol, the stress hormone. Food of any sort will also aid in the production of serotonin. So there is a biological reason for stress eating.

Anyway, back to my cookies... I made the cookies first and after they cooled I made the icing. I used one cup of chopped pecans so this is not budget friendly. And not for the faint hearted or diabetic as the frosting is extremely sweet. My dad said it is for 'young people'. Lol.

I made a mistake with the frosting and I added too little whipping cream. It was my error as I took the wrong cup to measure my half cup of whipping cream.... long story short, I made the frosting too dry and it solidified on me as I was drizzling... 😒 So those elegant streaks became dollops. Also, I ran out of brown sugar and substituted some of it with molasses, which made my icing have a dark colour.


Anyway, I have no regrets trying this recipe out. It is awesome albeit a sweet tooth's comfort food. The next time I try it, I will skip the icing. It is nice enough as it is. I ate like 6 already... and still want more! My mom said it is super addictive!

I will be pulling on the brakes on myself this weekend trying not to eat these tryptophan and serotonin inducing cookies as they will make me fat! I must try not to eat more than 5 a day... each cookie probably contains 1 tablespoon of sugar! But I guess, a few would be the same as drinking a can of soda anyway. I tend not to consume them or any sugary things normally anyway so this is a definite treat.

I will try to pack some for my brother and friends or I will end up eating them all of them and be fat. Anyway, the pecans make it really nice and I would make it again without the frosting or using the right amount of ingredients in the frosting.
