Making CNY Cookies

My mom has been busy lately making CNY cookies. So far we have made 4 types. She does most of the work - the mixing, shaping and baking. I assist with what I can. Which isn't much, but it's so fun!

So far the types of cookies we have made are pineapple tarts, oat choc chip, kuih bangkit and sugee cokies. My mom prepares the cookie dough and we make the cookies on large trays that bake in an industrial oven, basically a really wide oven. 


This first type I helped make was pineapple tarts. My mom shaped the jam into small balls and after my mom shaped the cookie base from a mould, I helped to place each ball onto the cookie base. I had to flatten the bottom of the ball and place it on. After that my mom baked them in the oven. It is really yummy. The jam is so good. And the cookie really buttery. 


I did not help for oat cookies. The second cookie I helped make was kuih bangkit. My mom made the cookie dough and I helped sift the flour and bake the flour with pandan. Then my mom used a cookie cutter to shape the cookies and I helped to pinch on imprints with a special tweezer. We used X shapes this year and a few heart shaped ones, where I stamped on the imprint. Then my mom baked them in the oven. The result is a powdery, melt in your mouth coconut cookie... very yummy indeed. 


The third type of cookie I helped make was sugee cookies. They are made of sugee flour, hence the name. They are really creamy and use clarified butter, also called ghee. My mom cut the cookies with a cookie cutter and when she had finished cutting all of them, I helped to prepare egg wash and brush each cookie with egg wash while my mom put red sprinkles on them down the centre. It looks like a pretty butterfly and are as delicious as they are pretty. 

I hardly help much but the little I help is appreciated, and I enjoy it too. Coming up is almond cookies and I will update on those soon. We make enough for ourselves to eat and to give to close relatives. Thanks for reading!
