We recently came back from my mom's hometown in Melaka. We had "balik kampung" again and we do so almost every month to visit my grandparents. They have an orchard at their house and it is always interesting to go back and see what is in season.

This time round, we took back bananas, coconuts and guavas which are growing all year round. We never fail to take back a few bunches of bananas. My mom plans to make a banana cake or banana bread. I made my usual banana cream pie.
I don't know why but I find banana cream pie really comforting. Maybe it is the whipped cream that gives lots of calories and sets off endorphins to the brain, triggering a release of dopamine. Or it could be the icing sugar in the whipped cream which instantaneously increases blood sugar.
This recipe is a new one I'm trying. It requires a whole can of sweetened condensed milk! Oh my God.... that is a lot. It firms up because of the cornflour and the 3 egg yolks. It uses a regular biscuit crust and a few sliced bananas at the bottom of the dish. The filling is cooked over the stove and poured into the crust on top of the bananas.
It is then topped with whipped cream. I wanted to try stabilised whipped cream, which is whipped cream with gelatin added to it so that it holds firm even after many days in the fridge. So I used a teaspoon of gelatin dissolved in water and added that to the whipped cream.

Anyway, it is one of my favourite desserts. As I said, calories and sugar rush. As you can see, the whipped cream is quite stable and it holds its shape. I consider the whipped cream quite a success, although I would have to try leaving it at room temperature and see if it still holds its shape then.

Anyway, banana cream pie is a good way to eat bananas. If you have many bananas, you can try many, many recipes, as bananas are very versatile! You can try caramelized bananas too, another one of my previous recipes.
I would like to make choc chip banana peanut butter oatmeal soon if I manage to wake up early for breakfast. Or it could be a lunch or tea... or even dinner!
My brother likes my banana cream pie and I will try to save a slice for him when he comes back next. He is not coming back today. Or I can just whip up another banana cream pie for when he joins us next! No worries at all. We have so many bananas after all.
