The other day I had a craving for marshmallows. I remembered that we had some mini ones that I asked my mom to buy as I planned to bake something with it. Then I recollected that I wanted to make a s'mores topped brownie or some sort of marshmallow bake.
So I took out the marshmallows and wanted to eat them right out of the package. But I restrained myself and channelled my energy into finding a recipe to make s'mores. I came across a few recipes and I made my s'mores loosely based around one recipe here called Gooey S'mores Bars.
While my mom was making Chinese New Year cookies, I multitasked helping her and making my Baked S'mores. My mom was making pineapple tarts and I helped by putting the rolled up ball of jam on top of the tart. I also helped prep the flour for kuih bangkit. Basically you add pandan leaves to some sifted flour and bake it in the oven for half an hour. It really smells like pandan after baking. So nice.
Anyway my S'mores turned out really sweet and gooey indeed. After putting it in the fridge it was more solid and easier to cut. Otherwise it is a chaotic, sticky mess. I made an 8 inch square and now I am thinking how to finish it without putting on 1 kg of fat on my thick frame.
Below is the recipe. Basically you prepare a graham or digestive cracker crust, lay on some sweetened condensed milk and top with chocolate chips (or any form of chocolate.. I used discs). Then you bake it for 20 mins, and add the marshmallows in a layer and bake that for 5 minutes (or 2 minutes if your oven has a broiler mode).
Ingredients
- 1 prepared graham or digestive cracker crust (8 inch square)
- 200ml condensed milk
- 1 and a quarter cup of chocolate chips, squares or discs
- 2 cups of mini marshmallows or cut large marshmallows in half
Directions
- Pour the condensed milk into the prepared crust.
- Lay out the chocolate in an even layer.
- Bake at 175℃ for 20 minutes
- Add marshmallows on top in an even layer.
- Bake for another 5 minutes on the top tray in a normal oven or 2 minutes using the broiler setting using a more advanced oven.
- Let cool and refrigerate 1 hour before serving.
It is very important to use the broiler. I did not have one so my marshmallows became really dry and sticky. When it gets dry and sticky it makes it really difficult to cut. After refrigerating it is easier to cut. I probably should have made a smaller amount as I am not hosting a party, and with 2 dieters in the house, I will probably have to eat it mostly myself! I would only make this again if I am throwing a party.
My mom is currently starting to make her yearly Chinese New Year cookies! She is starting early as there are a few different types. After making cookies will be cooking dishes for reunion dinner and for hosting dinner for my dad's side relatives. I do not have all the details at the moment but will blog about the whole cooking and feasting experience as we go along! This is the first time I am blogging about Chinese New Year! It is gonna be great.... so much food!
