Yesterday my aunt came to pick up my grandmother. She had been staying in our house for a week and went back to Melaka yesterday. My mom made us a teatime treat that exceeded all expectations. She made it ad hoc using what we already had. Now, that is a sign of a good cook.
Anyway, I have not been blogging lately coz I have been busy having some major events like teaching english and 2 other job opportunities I got from a job fair. Looks like my career is improving. I am aiming for 1-2 part time jobs and a few side ventures. Sometimes a girl gotta hustle, you know! More on that when it is concrete.
So, here are the delicious, light mini banana beignets. They taste just like donuts, and maybe even better and healthier than donuts!
They are coated with castor sugar in case you were wondering. The coating is castor sugar and ground cinnamon... yummy! I put some of the sugar mixture and my coffee and it was amazing.
By the way, the beignets were deep fried. That's the best way to make them. Inside, they are fluffy and outside crunchy!

They were a hit in our house and my aunty brought back some for my cousin. I have discovered a new obsession! Haha... Anyway, we all really enjoyed it and can't wait for more teatime treats to come!
