On Thursday, I met with 3 of my friends at my house to bake a blueberry cheesecake! We had been planning this for a while now and I was really looking forward to it.
So, we used a really simple recipe with cream cheese, whipped cream, icing sugar, vanilla and a biscuit crust. Only those 5 ingredients! Then it was topped with blueberry preserve.
It looked messy on the top as when we spread the blueberry topping, we mixed it a bit with the cheesecake.
Anyway, the texture was really fluffy, not like the previous lemon cheesecake we made together. It was fluffy and light because of the whipped cream. My only complaint was that the icing sugar made the cake too sweet. I should have known better and cut down some.
Anyway, we each got a quarter of the cake and I shared my quarter with my parents. They said it was really good! The cake is finished now and I still want more! I hope to bake again really soon! 😀
