On Thursday, 2 of my friends came over to make a lemon cheesecake. We had planned it for a while now and I was studying different recipes to make a simple and delicious lemon cheesecake.
I bought the ingredients a few days before. We used 24oz of cream cheese! To make a 9 inch round cake. I got the recipe from Pinterest and they have various similar ones there. I recommend you choose the one that fits your preference as some have more cheese and some have icing.
I chose one with lemon curd on top! A good choice I think, in retrospect. Because our lemon curd turned out awesome!! I felt like eating it with a spoon!
For the lemon juice, I added a few tsp extra than the recipe to make the cheesecake and lemon curd more sour as I like it that way. It also had a biscuit crust that I made out of crushed marie biscuits.
Anyway, we took a while to prepare as the cream cheese needs to be at room temperature... very important to get a smooth cheesecake. It baked for an hour and we had it in a water bath. Basically let the pan sit in a pool of water an inch deep in the oven. After baking, it had to sit in the oven for another hour with the oven door slightly ajar in order to let it cool without cracking the surface.
Then it cooled to room temperature outside the oven and went into the fridge overnight. The next day, I brought the cake to my friend's house (the same 2 friends that made the cake with me) and we cut it and ate it.
It was delicious! The cheesecake layer was so smooth and the lemon curd was sour and nice. After eating the cheesecake we went to Pavilion in Bukit Bintang and enjoyed ourselves even more. It was a good couple of days and I really enjoyed it all.
