Cauliflower Breadsticks

I'm back to baking! After a short break, I decided I should continue baking. Today i made cauliflower breadsticks!

They are made without flour, just cauliflower as the carb so I assume they are healthy, though it has lots of cheese in it. I went into it without expectation and the results were so yummy! I made a small portion and basically ate half of it myself already. We only had half a cauliflower, so I had to make do with it. The next time I make it, I will use a whole cauliflower as it disappears quickly before anyone else has a chance to eat it. Basically making more so that I myself can eat more.

Anyway the results and recipe are below. Enjoy!



Ingredients

Half a head of cauliflower
1 tbsp garlic
1 tbsp basil leaves
1/3 tsp salt
1 medium or small egg
1/2 cup shredded cheddar cheese
1/3 cup shredded mozzarella cheese
1/3 cup extra shredded mozzarella cheese for topping

Directions

  1. Cut off cauliflower florets from the main stalk and pulse them in the food processor a few times until it becomes cauliflower rice.
  2. Chop up garlic and basil leaves finely
  3. Mix together cauliflower, garlic, basil leaves, salt, egg and cheese in a large bowl.
  4. Put a piece of parchment paper on a baking tray.
  5. Spread out the cauliflower mixture onto the tray to make a rectangle. It should be about 1 cm thick or so. 
  6. Bake in the oven at 180℃ for 15 mins or more, until beginning to brown.
  7. Take it out of the oven and sprinkle remaining shredded mozarella cheese on top.
  8. Put back into the oven for another 5 mins or more until golden brown. 

Mine was over burnt, because I didn't remove it from the oven immediately. I thought I would let it sit and continue to cook but I didn't expect it to turn completely brown. The taste was ok however. It was nice and salty. But if you prefer less salty, put less salt or cheddar cheese.
