Usually I wouldn't eat lunch, but the other day my mom was planning to cook ramen for lunch. She uses the ramen and the seasoning pack but adds other fresh ingredients like vegetables or meat. It is a simple and nutritious lunch as the added ingredients ensure we have a balanced diet.
I thought of making ramen laksa as the night before we were having vegetable curry. My mom said she had some leftover curry paste, called "rempah". It is basically the condiments blended together to form the curry paste, including tumeric, chilli paste and ginger. Really fragrant. People who cook curry often will know.
Anyway, to make the ramen laksa, my mom boiled water and added the "rempah" to the water and some salt. Then added milk as we had no coconut milk left. To give the laksa a creamy taste. Then added some veggies from our garden, and the ramen noodles.
It tastes alright... an alternative to the ramen packet seasoning. I was lucky to have some of the rempah leftover so I could make this. But if I were to make it from scratch it would be difficult. I have seen some people making ramen dishes more interesting by adding their own spices so people can really get creative with this. There are many ways to make ramen more interesting.
Anyway, it was a good and nutritious lunch which only took a few minutes to prepare. I couldn't have asked for more from a simple noodle lunch.
