Mushroom and Potato Soup

I love both mushrooms and potatoes. I love succulent, flavourful mushrooms and powdery, starchy potatoes. Both are awesome on their own.

I came across a magazine recipe for mushroom and potato soup and I thought it was a stroke of genius. Why not combine 2 already awesome things and get a delish meal? I couldn't wait to try this recipe.


Ok, so I made it my own. I didnt have the soup stock ingredients. So I used 1 packet of shimeji mushrooms, 2 small potatoes and one sprig of spring onions as the main ingredients. For the soup stock, I just used half a chicken stock cube.


I cut the potatoes in bite size and boiled those first with the water and cube. After they were softened, I added in the mushrooms which I cut into individual stalks, and sprinkled chopped spring onions. That's it! It was really simple but the result was really delectable... to me anyway. It's potato and mushroom.... what's there not to like?

Anyway, we had dinner of fried fish and stir fried vegetables, so this soup was on the side. I am glad I decided to make this dish, as it was really simple, appetising and healthy.
