Ever since I saw this recipe, I wanted to make a salted caramel popcorn green tea sponge cake. (What a long name!) I wanted to make a green tea caramel cake so I Googled it and found that recipe which looked interesting. I now had the chance to try it and it reminds me of going to watch a movie at the cinema! So much popcorn!
It ended up different from the original as I added way more popcorn and cream. I had too much whipped cream and sprinkled too much popcorn without thinking. I also added a caramel drizzle made from caramel I made from scratch.
I wanted to make a sponge cake as I had some sponge cake mix leftover. I added green tea powder to the mix so the cake became green. Here is the recipe below. I made only a small cake - 6 inches.
Ingredients
One pre-made green tea sponge cake (can be made ahead of time using sponge cake pre-mix)
1 cup whipped cream (around 1/2 cup heavy cream, whipped)
Caramel sauce
Caramel popcorn
Directions
- When sponge cake is ready and cooled, spread on whipped cream icing on the top only
- Sprinkle desired amount of caramel popcorn
- Drizzle with warm caramel sauce. It has to be warm enough to drizzle but not too hot.
- Refrigerate before eating
Below is the recipe for caramel sauce made in the microwave oven. For a small batch. It has to be a small batch if you want to make it in the microwave. Otherwise it won't heat well.
Ingredients
1 tbsp salted butter
5 tsp brown sugar
20 ml heavy cream
A pinch of kosher salt
Directions
- Mix all ingredients into a mug and heat in the microwave for 20-30 seconds. Take out and stir and heat again for 10 seconds at a time until reached desired consistency.
- Add in kosher salt last and stir slightly.
