Healthy Coconut Oil Chocolate Fudge

I have been planning to make some chocolate fudge for some time now as I have seen some recipes on Pinterest. Finally I made it, but the healthy version. I used coconut oil to make it. The recipe uses coconut oil, lots of cocoa powder and honey as the sweetener. It is not low on calories but it uses superfoods. All the more reason to eat it!

My brother said it looked very decadent. But I didn't tell him it was healthy! He didn't come over this weekend and he just saw the photos. But I bet he missed coming back yesterday. It turned out quite well, just like dark chocolate in texture.

It was hard at first when I cut it, then oozy and drippy, as in Malaysia, coconut oil is liquid at room temperature. It doesn't stay solid for long so I had to cut, photograph and eat it fast.

I got the recipe here. It really is a simple and awesome recipe. It is silky smooth and the honey tastes so good. I used half a cup of cocoa powder, half a cup of coconut oil, and a quarter cup of honey together with vanilla extract and a pinch of salt.


I only allowed myself a few pieces in the afternoon, but after dinner I ate a couple more. I still have some left, but I doubt it will last very long. I am not sure why there is white dust on the top... maybe coz of the coconut oil. But it didn't affect the taste. It tastes so good!


The next time I make fudge, I will try the unhealthy version with condensed milk and chocolate chips. However I am not sure if I will like it as much as this version!
