Baked Oatmeal

I have decided to get more fibre in my diet, including insoluble fibre... so good for digestion as well as cholesterol. I have some problems with regularity these days.

I also plan to drink lots of liquids and eat more wholemeal bread. To this end, I decided to make an oat bake, adding flaxseed meal. Supposedly, yogurt and beans are also recommended. I usually take yogurt in the form of a yogurt drink, but i seldom eat beans. 

Anyway, I made the baked oatmeal yesterday. I used a recipe from Live Well Bake Often, I found on Pinterest when I searched Baked Oats Blueberry. It is a simple, flourless recipe... with no oil. 

Basically it is oats with bananas, an egg, milk and blueberries as the main ingredients. I added flaxseed meal on my own. It gives it a nutty texture. It is super healthy and I hope it helps me with digestion.


It uses an 8x8 inch pan and seems to make thin bars when cut. And it bakes in the oven for 30-40 minutes.


I used dried blueberries as I don't have fresh ones. The dried blueberries plumped up in the milk so they were quite soft and not chewy which was great. Overall I was quite happy with how this turned out. I think I should eat oats more often for my health.
