Apple Pecan Chia Seed Pudding

Yesterday my parents continued their construction work in the garden. I just did my own things as I couldn't help. But come teatime I made a dessert for them. However I needed to let it set, so we ended up eating it after dinner for dessert.

I made an apple pecan chia seed pudding. It turned out better than expected. I basically used chia seeds soaked in milk and water. It took a long time for the chia seeds to plump up.

While it was soaking in the fridge, I made the apple topping. I used one apple and I sliced some and cubed some. Then I added brown sugar and cinnamon and I microwaved it in the oven for 1-2 minutes. It smelled gorgeous with the smell of cinnamon wafting through the kitchen.


After the chia seed mixture was plumped up, I topped it with the cooked apple. I also toasted some pecans and cut them up and put them on top of the apple. Lots of toppings. And the apple, cinnamon and pecans really go so well together!

It is a healthy dessert and chia seeds have lots of nutritional benefits such as being rich in Omega 3. The only thing is that the apples were cooked in brown sugar so that was a bit sweet. I have not tried cooking the apples in stevia before but I would like to try to see if it is possible.

Below is the recipe.


Ingredients (for 2 servings)
5 tbsp chia seeds
1/2 cup milk (or coconut milk)
1/4 cup water
1 apple
8 pecans, chopped
1/2 tsp cinnamon
1 tbsp brown sugar

Directions
  1. Mix the chia seeds, milk and water together. Split into 2 separate cups.
  2. Soak the chia seeds for 2-3 hours until plumped up.
  3. Slice or dice 1 apple and add sugar and cinnamon. 
  4. Microwave the apple mixture on high for 1-2 minutes. 
  5. Toast 8 pecans in a toaster. Cut up into bits. 
  6. When chia seeds are ready, top with the apple mixture and pecans.
  7. Refrigerate before eating.
